The research lines of the Institute consist of three main topics:
The Institute focuses on the consumer. Therefore, researchers work on the study of preferences, needs, lifestyles and eating habits of citizens. They try to incorporate new business strategies into a sustainable global market and seek new products so that customers adopt the innovations. All this is carried out also taking as basis the concept of circular economy, i.e. efficient use of resources, thus integrating economy and sustainability.
With regard to sustainable production and food quality, the research institute investigates the improvement of sustainable agricultural and livestock production systems. It also addresses both the environmental impact assessment of agricultural activity and food safety and traceability, by predicting and determining the quality of products by using non-destructive, instrumental and sensory techniques.
Finally, and according to agro food innovation, ISFOOD seeks the innovation of food processes , such as (1) emerging technologies for processing and preserving products; (2) the formulation and development of foods with healthy properties, functional foods or those ones adapted to situations with special nutritional needs; (3) and the improvement of foods shelf-life. All this based on sustainable systems and natural components. In addition, IS-FOOD promotes innovative management processes in agricultural and food companies.
